CLAM CAKES 
1 beaten egg
2 egg whites
1 c. clams, chopped in sm. pieces
1/2 c. clam juice
1/2 c. milk
Pinch of salt
Enough flour to stiffen batter
1 tsp. baking powder

Use enough flour to stiff batter so it will hold together but not drop too easily from spoon. Add baking powder, mixing well. Drop by teaspoonfuls into hot oil; fry like French fries.
