WELSH RAREBIT 
2 tbsp. butter
1 tbsp. flour
1/4 tsp. salt
Few grains cayenne pepper
1 tsp. dry mustard or prepared mustard
1 c. milk
1 1/2 c. cheddar cheese, cut in cubes

Melt butter; add flour, cheese, seasonings, in double boiler. As cheese melts, gradually add milk. Stir until thickened. Serve over toast or saltine crackers.
