CHICKEN ITALIANO 
2 whole chicken breasts, boneless and skinless
1 green pepper, sliced
1 sm. red onion, sliced
1/2 c. olive oil (approx.)
1 tsp. dried basil
Pinch fennel seeds
1/2 c. flavored bread crumbs

Oil ovenproof casserole. Press bread crumbs into both sides of chicken. Place chicken in casserole. In a small bowl mix peppers, onions, basil, fennel and half the oil. Place pepper and onion mixture on each chicken breast. Bake in preheated oven at 425 degrees for 20 minutes.

Serves 4.
