SQUASH CREOLE 
1/2 c. bacon, chopped
1/3 c. onion, chopped
3 cubed summer squash or zucchini
1/2 c. hot water
1/4 c. catsup
Salt & pepper to taste

Lightly brown bacon, add onion and cook until golden. Add remaining ingredients. Cover and simmer until just tender, about 20 minutes.
