NACHOS SPAGHETTI 
This recipe is simple to prepare and a lot of fun for kids. It's a great dish and my 1 year old LOVES it!

1 lb. Velveeta cheese (1/2 block), diced
1 jar El Paso's salsa (I prefer hot salsa, but for those whose stomachs are sensitive, mild works just as well)
1 green pepper
1 red pepper
1/2 onion
1 (1 lb.) box spaghetti
1 lb. ground beef

All you do is boil the spaghetti until it's tender, chop the peppers and the onion until the onions are a golden brown. Cook the ground beef until completely brown, and then mix the peppers, onions and salsa into the ground beef. The tricky part is melting the Velveeta. It takes about 15 to 20 minutes on medium heat. Stir it until it's completely melted with no bumps.

Now all you do is mix the spaghetti, your ground beef salsa veggie mix and the Velveeta together and serve.
