MER'S SPINACH AND CHEESE EGG

6 eggs, slightly beaten
1 pt. low or non fat cottage cheese
1 (10 oz.) box frozen chopped spinach, thawed
1 1/2 c. grated Swiss or Cheddar cheese
2 to 4 green onions, sliced (with tops)
1/2 lg. red bell pepper, chopped
2 skinless, boneless chicken breasts, cooked and shredded

Stir beaten eggs into cottage cheese. Squeeze as much water as you can from the spinach, then stir into cottage cheese mix. Stir in onions, bell pepper and shredded chicken. Saving some for the top, stir in the grated cheese. Add anything else you like: cooked potatoes or sausage, canned olives or green chilies, etc. Season depending on cheese used: dash nutmeg for Swiss, chili powder or Tabasco for Cheddar. Pour into a lightly oiled (I use spray) 7 x 11 inch Pyrex dish. Sprinkle remaining cheese on top. Bake uncovered at 325 degrees for 45 to 55 minutes or until set. Cool for 5 minutes before serving.
