PEANUT BRITTLE (MICROWAVE) 
1 c. sugar
1/2 c. corn syrup
1 3/4 c. unsalted dry roasted peanuts (may substitute cashews)
1 tsp. butter
1 tsp. vanilla
1 tsp. baking soda

Generously grease cookie sheet; set aside. Combine sugar and corn syrup in 2 qt. glass measure. Place in microwave on high for 4 minutes. Stir in peanuts with wooden spoon. Cook on high 4 minutes. Stir in vanilla and butter. Cook on high for 2 minutes. Add baking soda; Stir until light and foamy. Pour onto cookie sheet, spread quickly to edges using back of wooden spoon. As candy cools, stretch into thin sheet using palms of hands. Cool completely, break into pieces. Store in airtight container. Yields 1 pound.

Since microwave ovens vary in power, you may need to adjust your cooking time.
