MICROWAVE PEANUT BRITTLE 
1 c. sugar
1/2 c. corn syrup
1 c. unsalted nuts
2 tbsp. butter
1 tsp. vanilla
1 tsp. baking soda

Line jelly roll pan with foil and spray with non-stick spray. Combine sugar and corn syrup in "deep" 2 quart glass bowl. Cook on high 7 minutes. Stir in nuts, butter and vanilla with wooden spoon. Cook 3 minutes on high. Stir in soda and quickly spread on foil. Refrigerate 10 minutes. Then cool completely at room temperature. Store airtight.

Since microwave ovens vary in power, you may need to adjust your cooking time.
