3 1/2 c. sifted flour
1/2 tsp. salt
1 tsp. baking soda
1/4 tsp. nutmeg
1 c. soft shortening
1 egg
3/4 c. coconut
1 1/2 c. sugar
1 c. crushed pineapple with the juice

In a large bowl mix sugar and pineapple thoroughly. Sift flour, salt, soda, and nutmeg and stir into the sugar mixture. Mix in coconut, shortening, and egg. Drop rounded teaspoons of dough about 2 inches apart on lightly greased baking sheet. Bake 8-10 minutes at 375 degrees. Makes 5 dozen cookies.
