TACO SALAD 
1 lb. ground beef
1 pkg. taco seasoning mix
1 head lettuce
4 ripe tomatoes
1 med. bottle Catalina salad dressing
Optional: onions, olives, green pepper, kidney beans
1 lb. cheddar cheese
1 bag cheese flavored nacho taco chips

Brown ground beef, drain fat. Add contents of taco seasoning mix and 1 cup water; simmer 10 minutes. Grate cheese. Let ground beef cool. Chop lettuce and tomato into bite size pieces. Crush taco chips. Mix all ingredients together. Add salad dressing and mix well. Prepare immediately before serving (except ground beef).

I love this salad. It's perfect for a warm summer evening with Margaritas on the deck. I use Fritos instaed of nacho taco chips, black beans instead of kidney beans and some drained diced mild chilies. I only use 2 tomatoes.
