EASY EGGPLANT 
1 (1 1/2 lb.) egg plant, peeled & cut into 1 inch cubes
1/2 c. seasoned bread crumbs
1/2 c. grated Parmesan cheese
1 (8 oz.) can tomato sauce
4 oz. shredded mozzarella cheese

Mix seasoned bread crumbs and Parmesan cheese together in 1 1/2 quart casserole dish.

Add cubes of eggplant to crumbs and toss to coat.

Pour tomato sauce over eggplant and toss lightly.

Top with mozzarella cheese.

Bake in 350 degree oven for 30 to 35 minutes.

This was really great! I used bottled spaghetti sauce instead of tomato sauce and I used Feta cheese instead of mozzarella...everyone loved it and there were no leftovers!
