HAWAIIAN CHICKEN 
1 chicken or 12 breasts of chicken
1 can pineapple, chunks, drained
1/2 c. pineapple juice
1 onion, chopped
1/4 c. brown sugar
1/4 c. soy sauce
2 tbsp. fresh ginger (or crystallized ginger)
1 tbsp. fried chicken drippings

Shake chicken in seasoned flour and brown quickly in skillet. Place in casserole, add remaining ingredients; cover and bake in oven for 30 minutes. If more juice is needed, add water or pineapple juice. Serves 6 to 12 depending on amount of chicken. This may be prepared ahead of time. Liquid from casserole is good served on rice.
