IRISH SODA BREAD | |
4 c. sifted all purpose flour 1 tbsp. sugar 1 1/2 tsp. salt 1 tsp. baking soda 1 c. dried currants 1 1/2 c. buttermilk Preheat oven to 400 degrees. Sift flour, sugar, salt, and baking soda into a large bowl; stir in currants to coat with flour. Stir in buttermilk, just until flour is moistened. Knead dough 10 times in bowl with lightly floured hands. Turn dough out onto lightly floured cookie sheet and shape into an 8 inch round. Cut a cross into the top with a floured knife. Bake in a preheated 400 degree oven for 40 minutes or until loaf turns golden and sounds hollow when tapped. Cool completely on wire rack before slicing. Makes 1 loaf. |
