AMISH SHOO-FLY PIE 
(Makes two 8 inch pies)

CRUMB MIXTURE:

2 c. flour
3/4 c. brown sugar
1/3 c. butter
1/2 tsp. nutmeg, optional
1 tsp. cinnamon, optional

Mix ingredients together thoroughly in a bowl until crumbs are formed.

SYRUP MIXTURE:

1 c. molasses
1/2 c. brown sugar
2 eggs
1 c. hot water
1 tsp. baking soda dissolved in hot water

In a separate bowl, mix syrup ingredients thoroughly. Pour half of syrup mixture into unbaked pie crust, then add half of crumb mixture; repeat with the other pie plate. Bake at 400 degrees for 10 minutes, then reduce heat to 350 degrees and continue baking for 50 minutes more. Cool before eating.
