QUICK PICKLED BEETS | |
1 (16 oz.) can sliced beets or sm. whole beets (about 2 c. drained) 2 med. onions 1 c. vinegar, 5% acidity 1/2 c. sugar 1/2 tsp. salt 1/2 tsp. dill weed Drain beets. Cut into equal size. Slice onions very thin and separate into rings. Mix together in a saucepan vinegar, sugar, salt and bring to a boil. Add onions and dill weed. Pour over beets. Cool. Chill in refrigerator 1 hour or longer. Keeps as long as refrigerated. |
