APPLE WALNUT CAKE 
1 1/2 c. salad oil
2 c. sugar
3 eggs
1 tsp. vanilla
4 c. diced apples
1 c. chopped walnuts
3 c. flour
1 tsp. salt
2 tsp. baking powder
1 tsp. cinnamon

Beat first 4 ingredients until fluffy. Add apples and walnuts to mixture. Sift flour, salt, baking powder, and cinnamon and add to above by folding in gradually.

This is a heavy batter but light when baked. Bake in a 13x9 cake pan at 350 degrees for 40-50 minutes. Best without icing or just sprinkle with confectioners sugar.
