MAINE CRABMEAT BREAKFAST PIE 
8 lg. eggs
1/2 c. finely chopped scallions (about 6)
1 lg. red bell pepper, cored, seeded & diced (1 c.)
6 oz. fresh or imitation crabmeat, torn in shreds
4 oz. Swiss cheese, shredded (1 c.)
4 oz. cheddar cheese, shredded (1 c.)
2 c. half & half
1 tsp. salt
1/2 tsp. pepper
1 c. fresh bread crumbs (from 3 slices white bread)

1. Heat oven to 350 degrees. Grease a 10" quiche pan or shallow 2 quart baking dish.

2. Whisk eggs until blended. Add remaining ingredients and stir to mix well. Pour into prepared pan.

3. Bake 45 minutes or until set and knife inserted near center comes out clean. Let stand about 10 minutes before serving.

Makes 8 servings, 317 calories per serving.
