CHICKEN PARMESAN 
2 whole chicken breasts, boned, skinless
4 slices Mozzarella cheese
1 can Aunt Penny's white sauce
Seasoned bread crumbs
2 tbsp. butter
Vegetable oil
1/2 c. grated Parmesan cheese

Cut breasts in half, pound thin, coat with bread crumbs. Saute in oil over medium high heat. Remove from pan. Top with slice of cheese. Melt butter in pan chicken was cooked in. Add white sauce, stir to mix. Pour sauce over chicken, sprinkle with Parmesan cheese.

I was looking for recipes with Aunt Penny's White Sauce when I found this. This is the BEST chicken I have ever tasted. The only changes I made were: I didn't use seasoned bread crumbs, just plain and I use grated Mozzarella instead of sliced because I already had these on hand. This will be a regular dish in our home from now on.
