MC LAREN'S SUNSHINE SALAD 
1 c. boiling water
1 (3 oz.) pkg. lemon gelatin
1/2 c. cold water
1/8 tsp. salt
1 (8 3/4 oz.) can crushed pineapple
1/2 c. shredded carrots
1/2 c. finely chopped walnuts

Pour boiling water over gelatin in bowl, stirring until gelatin is dissolved. Stir in cold water, salt, and pineapple (with syrup). Chill until slightly thickened but not set. Stir in carrots and nuts. Pour into 4 cup mold or into 6 individual molds. Chill until firm. 6 servings.
