MOCK HOLLANDAISE SAUCE 
1 c. milk
2 tbsp. flour
1 1/2 tsp. butter
1/2 tsp. salt
1 tbsp. lemon juice or vinegar
2 egg yolks
2 tbsp. butter

For white sauce, combine milk, flour, 1 1/2 tablespoons butter and salt. Use 1 cup hot white sauce plus remaining ingredients. Good to use on mashed potatoes or toast or whatever.
