APPLE - CINNAMON - NUT MUFFINS 
1 egg
3/4 c. milk
1/2 c. vegetable oil
2 c. all-purpose flour
1/3 c. sugar
3 tsp. baking powder
1 tsp. salt
1 apple
1/2 c. English walnuts
2 tsp. cinnamon

Beat 1 egg and 3/4 cup milk, 1/2 cup vegetable oil; add 2 cups regular flour, 1/3 cup white sugar, 3 teaspoons baking powder, 1 teaspoon salt, 2 teaspoons cinnamon, 1 pared and cored and chopped fine apple, and 1/2 cup English walnuts. Stir together until mixed well. Bake in greased muffin cups 20 minutes at 400 degrees.

Before putting in oven, top muffins with brown sugar.
