PEANUT OR ALMOND BUTTER COOKIES 
2 1/2 lbs. shortening
5 c. peanut or almond butter
6 1/4 c. brown sugar
5 c. sugar
7 1/2 oz. dry eggs
2 1/2 c. water or 15 whole eggs
2 1/2 tsp. vanilla extract
3 qts. flour
5 tsp. baking soda
5 tsp. baking powder
2 1/2 tsp. salt
1/2 No. 10 can peanut granules

Cream shortening, peanut or almond butter, sugars, eggs, and vanilla. Add dry ingredients and mix. Stir in granules. Portion with level scoop. Bake 350°F conventional oven 10 to 12 minutes.

Yield: No. 30 scoop - 180 cookies. No. 40 scoop - 200 cookies.
