OVEN - BARBECUED CHICKEN | |
2 (2 1/2-3 lb.) broiler fryer, cut up 1/2 c. flour 2 tsp. salt 1/4 tsp. pepper 1/4 c. oil 1 lg. onion, peeled, thinly sliced & separated into rings 3/4 c. chopped celery 1 c. catsup 1 c. water 2 tbsp. Worcestershire sauce 1 tbsp. brown sugar Dip chicken in flour, salt and pepper; brown lightly in hot oil. Remove to baking dish. Pour all but 2 tablespoons oil from pan. Add onion rings and celery; saute until golden. Stir in catsup, water, Worcestershire sauce and brown sugar. Simmer 5 minutes. Pour over chicken. Cover and bake at 350 degrees for 1 hour. 6 servings. Great with mashed potatoes, using sauce as gravy. |
