GRASSHOPPER TORTE | |
1/4 c. melted butter 1 tbsp. plus 3/4 c. sugar (3/4 c. for filling) 26 chocolate wafers, crushed 1 env. unflavored gelatin 2 c. heavy cream, whipped 1/2 c. water 1 (8 oz.) pkg. cream cheese 1/3 c. Creme de Menthe Combine butter, 1 tablespoon sugar, and chocolate wafers for crust. Press 2/3 of the mixture into a spring form pan. Chill. Sprinkle the gelatin over the water in a small saucepan. Let stand 5 minutes. Stir over very low heat until gelatin is dissolved. Beat cream cheese with the remaining 3/4 cup sugar in a small bowl with an electric mixer until fluffy. Gradually beat in the gelatin mixture. Stir in the Creme de Menthe. Fold the whipped cream into the mixture until no white streaks remain. Sprinkle with reserved chocolate wafer mixture. Chill. |
