EFTHIHIA'S SPANICOPITA (SPINACH
PIE)
 
3 bunches spinach
Olive oil
1 onion
1 pkg. Feta
1 lg. cottage cheese
8 eggs
1 pkg. Filo
Fresh dill and pepper

Wash spinach 3 times. Steam until tender. Drain. Cover bottom of large pot with oil. Cook chopped onions until tender - add spinach. Take off heat, add fresh dill and pepper to taste. Crumble Feta and add to pot. Mix 8 eggs and add. Mix together well. Grease large baking dish with olive oil.

Put 8 layers Filo, dribbling olive oil between each layer. Add layer of spinach mix, repeat until you have used up spinach mixture. Finish with 4 or 5 layers of Filo on top adding oil between as before.

Brush with oil on top of last layer. Cut diagonally through all layers. Cook at 350 degrees for about 1/2 hour or until brown and crisp. Cut other way when done. Cool 10 or 15 minutes. Eat.
