CHEESE MUFFINS 
2 c. flour, sifted
3 tsp. baking powder
1/2 tsp. salt
2 tbsp. sugar (or Splenda)
1/2 c. grated cheese
1 egg, lightly beaten
1 c. milk
1/4 c. oil

Combine flour, baking powder, salt, sugar and cheese. In a separate bowl, combine egg, milk and oil. Add liquid mixture to dry mixture at once and stir only until flour is dampened. Fill greased muffin tins 2/3 full.

Bake at 425°F for 20 to 25 minutes.
