MABEL'S SUMMER SALAD LOAF 
1 env. plain gelatin
1/4 - 1/2 c. cold water
1/3 c. lemon juice
1 lb. can salmon or 1-2 cans tuna
1 c. mayonnaise or salad dressing
1 c. chopped celery
1/2 c. chopped green peppers
1/2 tsp. salt
Sliced hard boiled eggs, cucumbers & lemons for garnish

Soften gelatin in cold water and dissolve over hot water. Add all ingredients and mix lightly (fish should be in large chunks). Pour into oiled mold and chill. Unmold and garnish with sliced hard boiled eggs, sliced cucumbers and lemons.

I make this on summer days when I want something light and cool for supper!
