LONDON BROIL 
2 lbs. quality flank steak, scored
1 tbsp. butter
1/4 tsp. salt
1 tsp. lemon juice
1/4 tsp. pepper
2 med. onions, sliced thin
2 tbsp. salad oil
2 cloves garlic, crushed

Melt butter in skillet. Cook and stir onions. Add salt to the butter and cook until onions are tender. Keep warm over low heat. Stir together salad oil, lemon juice, garlic, salt and pepper. Brush on top side of meat.

Set oven control at Broil. Broil meat 2-3 inches from heat for about 5 minutes or until brown. Turn meat; brush with oil mixtures and broil for 5 minutes longer. Cut meat across grain at a slanted angle into thin strips. Place on platter and put onions over meat.
