ZUCCHINI BARS 
3/4 c. butter
1/2 c. brown sugar
1/2 c. granulated sugar
2 eggs
1 tsp. vanilla
1 3/4 c. flour, unsifted
1/2 tsp. salt
1 1/2 tsp. baking powder
3/4 c. coconut
3/4 c. chopped dates
3/4 c. raisins (optional)
2 c. zucchini, shredded

Cream together butter, sugar, add eggs and vanilla. Beat to blend. In a small bowl, mix together flour, salt and baking powder. Gradually add to the creamed mixture and beat to blend. Stir in raisins, dates, coconut, and zucchini. Spread in a greased 10 x 15 pan. Bake at 350 degrees for 35-45 minutes. Frost with glaze while still warm.

GLAZE:

1 c. confectioners sugar
1 tsp. vanilla
1 tbsp. melted butter
2 tbsp. milk
1/4 tsp. cinnamon
1/4 tsp. nutmeg

Mix together and top cake off with 2/3 cup chopped walnuts.
