CHICKEN WALNUT SALAD 
1 c. walnuts, coarsely chopped
1 cooked chicken, cubed (chicken breasts may also be used)
1 c. sliced celery
1 orange, cut in bite-size pieces
1 tbsp. frozen orange juice concentrate, thawed
1 tbsp. sugar (or sugar substitute equivalent)
3 tbsp. salad oil
1 tbsp. vinegar
1/8 tsp. dry mustard
Few drops bottled hot sauce
1/4 c. mayonnaise or salad dressing
Optional Dressup: 1 med. avocado

In mixing bowl, combine chicken, celery, walnuts and orange pieces; cover and chill.

To make dressing, stir together orange juice concentrate, oil, sugar, vinegar, dry mustard, hot pepper sauce and a dash of salt. Fold in mayonnaise. Pour over chicken mixture and toss lightly to coat. Cover and chill. Serves 4-6.
