CHICKEN AND ZUCCHINI BAKE 
4 c. zucchini
1/4 c. onion
1 (8 oz.) container sour cream
1 can cream of chicken soup
1 plus c. shredded carrot
1 (6 oz.) pkg. stuffing mix
1/2 c. butter, melted

Cook zucchini and onion together until tender. Combine sour cream, soup, and carrot together. Combine stuffing mix and butter. Place 1/2 of stuffing mix in bottom of 9 x 13 inch pan sprayed with Pam. Layer vegetables, chicken, and sauce; top with remaining stuffing. Bake 25-30 minutes at 350 degrees.
