HEAVENLY RICE PUDDING 
1 1/2 c. cold cooked rice
1 1/2 c. diced marshmallows
1/2 c. well drained canned crushed pineapple
1/4 c. well drained chopped maraschino cherries
1/4 c. chopped nuts
2/3 c. (small can) undiluted evaporated milk
2 tbsp. lemon juice
1/2 c. confectioners' sugar

Mix rice, marshmallows, pineapple, cherries and nuts in bowl. Chill milk in refrigerator tray until soft ice crystals form around edges of tray (15 to 20 minutes). Whip until stiff (about 1 minute).

Add lemon juice and whip very stiff (about 2 minutes longer). Beat in sugar. Fold whipped milk into rice mixture. Serve.
