MEATLESS PEA SOUP 
1/2 sm. head lettuce, chopped
1 lg. onion, chopped
1 lg. pkg. split peas
1/4 stick butter
2 carrots, sliced
3 qts. boiling water
Salt & pepper to taste

In a large soup pot, saute lettuce, onion and butter for 5 minutes or until they wilt and turn tan. Add 3 quarts boiling water, 1 pound peas and 2 carrots. Cover loosely, simmer 1 1/2 to 2 hours until peas disintegrate. Season to taste. 8 servings.
