BITTER MELON OR WINTER MELON 
1 lb. bitter melon or winter melon
3 tbsp. cooking oil
1/2 lb. pork
2 cloves garlic, minced
1 onion, sliced
1 egg, beaten
4 ripe tomatoes
1/2 lb. raw shrimp
1 c. shrimp stock OR
1 c. chicken broth
1 tsp. salt
1 tsp. black pepper

Slice pork into thin strips about 1-inch long, peel and chop tomatoes, shell and devein shrimp. Wash bitter melon and remove seeds. Slice thinly, crosswise, and reserve. (Peel winter melon, if it is used.)

Heat oil in a frying pan and saute pork until browned. Stir in garlic; then add onion and tomatoes. Stir in shrimp and shrimp stock; cover and simmer until tender.

When meat becomes tender, add bitter melon, salt, and pepper. Then stir in the beaten egg. Cook for 3 minutes. Serve hot.
