LEMON CHEESE CAKE 
1/3 c. sugar
2 c. low fat creamed cottage cheese (1 lb.)
1/2 c. skim evaporated milk
2 egg whites
2 whole eggs
1 tbsp. grated lemon rind
1/3 c. fresh lemon juice
1 c. graham cracker crust with 2 tbsp. melted butter
1/4 c. flour

Put all ingredients in blender except flour and blend until smooth, then add flour.

Mix and pour into 9" spring form pan with graham cracker crust and bake 1 hour at 300 degrees.

Frost with vanilla flavored yogurt or fruit yogurt; garnish with kiwi fruit or lemon or fruit.
