JEWELED BANANA BREAD | |
1 3/4 c. sifted flour 2 3/4 tsp. baking powder 1/2 tsp. salt 1/2 c. chopped walnuts 1/3 c. shortening 2/3 c. sugar 2 eggs 1 c. mashed bananas 1 c. mixed candied fruit/peels 1/4 c. raisins Sift together flour, baking powder and salt. Add nuts. Set aside. Cream shortening and sugar until light. Add eggs, one at a time. Beat until thick and lemon colored. Add flour mixture and bananas alternately, blending after each. Fold in fruits/peels and raisins. Pour into 8 1/2 x 4 1/2 inch loaf pan, greased only on the bottom. Bake in 350 degree oven for 30 to 50 minutes or until done. Let cool 20 minutes before turning onto rack. Cool thoroughly before wrapping for storage. |
