BANANA FRITTERS 
3/4 c. all-purpose flour
2 c. bite size crisp corn squares cereal, crushed to measure 2/3 c.
1 1/2 tsp. baking powder
2 tsp. sugar
1 egg
1/2 c. milk
3 bananas, mashed

Combine flour, cereal crumbs (use a glass measuring cup rather than a dry measure for the cereal), baking powder and sugar. Beat egg, milk and bananas; add to dry ingredients. Mix just until moistened. Drop from tablespoon into deep hot fat (375 degrees) and fry until brown, 2 to 3 minutes. Drain on paper toweling. Sprinkle with powdered sugar or serve with syrup, if desired.
