ITALIAN COCONUT CREAM CAKE | |
2 c. sugar 5 egg yolks 1 stick butter 1/2 c. Crisco 2 c. flour 1 tsp. baking soda 1/2 tsp. salt 1 c. buttermilk 2 c. coconut 1/2 c. pecans 1 tsp. vanilla 5 egg whites Cream together first 4 ingredients. Add remaining ingredients except egg whites; mix well. Beat together egg whites; fold into mixture. Bake at 350 degrees for 30-35 minutes. Will make 3 (8 inch) layers or loaf pan. FROSTING: 1 (8 oz.) pkg. cream cheese 1/2 stick butter 1 lb. box powdered sugar 1 tsp. vanilla Coconut Cream butter and cream cheese; add powdered sugar and vanilla. Sprinkle coconut on top of cake. |
