PUMPKIN CAKE 
4 eggs
1 1/2 c. peanut oil
2 c. pumpkin (1 lb. can)
3 c. sifted flour
1/2 tsp. salt
2 tsp. baking soda
2 tsp. baking powder
2 tsp. cinnamon
1 tsp. pumpkin pie spice (opt.)

Mix all together in a large bowl. Mix on medium speed for about 1 1/2 minutes. Pour into a greased and floured tube or large bundt pan. Top with crumbs and bake at 350 degrees for 50 or 60 minutes. Test with toothpick.

CRUMBS:

6 tbsp. flour
2 tbsp. sugar
2 tbsp. butter

Cut with a fork until crumbly.
