BURRITO PIE | |
1/4 c. salad oil 4 (8 inch) flour tortillas 1/2 lb. ground beef 1 med. onion, diced 1 sm. clove garlic, minced 1 (4 oz.) can chopped green chilies, drained 1 (8 oz.) can refried beans (may omit) 1/3 c. hot or mild Taco Sauce 1/2 lb. Monterey Jack cheese, shredded In a 10 inch skillet over medium heat, in hot oil, fry 1 tortilla at a time, about 30 seconds each side. Fry until lightly browned and blistered. With tongs remove tortillas and discard oil. Preheat oven to 350 degrees. In same skillet over high heat, cook beef, onion and garlic until well browned stirring occasionally. Remove skillet from heat, stir in chilies, beans and taco sauce. In a 9 inch pie plate, place 1 tortilla, top with 1/4 meat mixture and 1/4 cheese. Repeat 3 times. Bake pie about 30 minutes or until heated through. Sprinkle pie with lettuce, tomatoes and top with sour cream. |
