PIG AND TATTIE PIE 
3 potatoes, peeled
1 lb. bulk sausage or 1 smoked sausage
1 tbsp. caraway seeds
1/3 c. grated fresh Parmesan
2/3 c. applesauce
1/2 c. additional grated fresh Parmesan
1 sm. onion, sliced in thin rings

Slice 3 peeled potatoes into rounds. Cook until tender, 12 minutes. Slice sausage into rounds. Brown sausage in skillet, when the fat renders, add caraway seeds. Place potatoes in bottom of a greased baking dish. Sprinkle with 1/3 cup grated fresh Parmesan. Layer sausage over and drizzle lightly with pan drippings. Spread over sausage (in order)

2/3 cup applesauce

1/2 cup grated fresh Parmesan

1 small onion, sliced in thin rings

Bake in 350 degree oven until top is golden and onions are brown, about 40 minutes. Serves 4.
