LATTICED CHICKEN CASSEROLE 
CHICKEN MIXTURE:

2 c. chicken or turkey, cooked and chopped
1 (1 lb.) pkg. frozen broccoli, cauliflower and carrots, thawed and drained
1/2 c. cheddar cheese, shredded
Half of 2.8 oz. can French fried onions
1 can cream of chicken soup

CRUST:

1 c. biscuit mix
1 egg, slightly beaten with 1/4 c. milk

TOPPING:

1/2 c. cheddar cheese, shredded
Other half of 2.8 oz. can French fried onions

Mix chicken mixture together and place in a greased 8 x 12 baking dish. Bake for 10 minutes, uncovered, at 425 degrees. While baking, combine crust ingredients forming a soft dough. Spoon over casserole in lattice design. Bake, uncovered, at 425 degrees for 25 minutes. Top crust with another 1/2 cup shredded cheddar cheese and remaining half of onions. Bake about 5 minutes until cheese melts.
