KLUSKIS 
4 beaten eggs
15 oz. ricotta cheese
2 heaping c. flour
1 med. onion, diced
1 stick butter

Saute onion in butter. Set a pot of water on to boil. Combine eggs, cheese, and flour in bowl. Drop teaspoonfuls into boiling water. Stir gently to unstick from bottom. When they rise, cook for 1 minute more. Drain. Cover with sauteed onions and butter. Use salt and pepper to taste. Add a dollop of sour cream on top if desired. To reheat, pan fry kluskis with more butter and onions or microwave.

Since microwave ovens vary in power, you may need to adjust your cooking time.
