BURRITO CASSEROLE | |
1 1/2 lbs. ground beef 1 med. chopped onion 1 1/2 c. water 1 can El Paso Refried beans 1 pkg. flour tortillas 1 (16 oz.) mild taco sauce 3 c. shredded Cheddar cheese 2 c. shredded Monterey Jack cheese Brown ground beef with onion and drain. Add water and refried beans. Simmer and stir 10 minutes. Place tortillas flat in 9x13 inch oblong dish to cover bottom and thinly spread meat/beans mixture over tortillas. Pour 1/4 bottle taco sauce over meat/bean mixture. Sprinkle with cheese. Repeat this layer, starting with tortillas and ending with tortillas, taco sauce and cheese, 3-4 layers. Bake uncovered 350 degrees approximately 30 minutes until bubbly and cheese is melting. Let stand 10 minutes before serving. Garnish top with shredded lettuce and tomatoes. Serve with sour cream on the side. |
