BLACK BEANS 
1 lg. onion, chopped
1 med. size green pepper
1 clove garlic
1 can (8 oz.) tomato sauce
1 can (19 oz.) black beans
Olive oil
Red wine vinegar
Oregano
Salt
Pepper
1 tsp. bacon bits

Sauce: Chop onion and green pepper. Add small amount of olive oil to 1 1/2 quart pan. Simmer chopped onion, green pepper 3-5 minutes. Add bacon bits, 1 teaspoon chopped garlic clove and add to ingredients. Add oregano, salt and pepper. Add tomato sauce. Cover and simmer 5 minutes.

Add black beans to sauce (with juice in can). Cook for 20 minutes adding garlic, wine vinegar to your own taste.

Prepare 2 cups of white rice long grain. Serve over rice.

Makes 4-6 servings.
