CARROT CAKE 
2 c. flour
1 1/2 c. brown sugar
2 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. salt
1 1/4 c. oil
3 eggs
2 tsp. vanilla
1 c. nuts
2 c. shredded carrots

Mix flour, brown sugar, baking soda, cinnamon and salt. Add oil, eggs, vanilla, nuts and shredded carrots. Mix together, put into a greased and floured tube pan and bake for 1 hour at 325 degrees.

CREAM CHEESE FROSTING:

1/2 stick butter
1 1/2 c. confectioners sugar
1/2 c. sour cream
1 (8 oz.) cream cheese

Mix with electric beater and put on cooled carrot cake.
