HERBED CHICKEN WITH LEMON AND WINE | |
1 tsp. instant minced garlic 1 tsp. water 2 tbsp. olive oil 1 chicken (3 lbs.) cut in eighths 1 1/2 tsp. Italian seasoning (crushed) 1/2 tsp. salt 1/4 tsp. ground black pepper 1/2 c. dry white wine 2 tbsp. lemon juice 2 tbsp. lemon peel cut in matchsticks, optional Combine water and garlic. Let stand until softened, about 10 minutes. In a large skillet heat oil until hot. Add chicken. Brown on all sides, about 10 minutes. Drain off all but 1 tablespoon of the drippings. Add garlic. Saute until golden, about 3 minutes. Add Italian seasonings, salt, black pepper, wine, and lemon juice. Bring to boil, reduce heat and simmer, covered, until chicken is cooked through, about 30 minutes. Remove chicken to a heated platter. Simmer sauce, uncovered, until reduced to 1/2 cup, about 3 minutes. Pour over chicken. Sprinkle with lemon peel if desired. |
