ROYAL ZUCCHINI PARMESAN 
1 lb. hamburger
2 med. onions, chopped
2 tbsp. salad oil
1 (16 oz.) can solid pack tomatoes
1 (8 oz.) can tomato sauce
1 (6 oz.) can tomato paste
1 green pepper, chopped
1 c. grated cheddar cheese
1 tsp. salt
1/4 tsp. garlic powder
1 tsp. oregano
4 med. zucchini, sliced 1/2 inch thick
1/2 c. grated Parmesan cheese

Saute hamburger and onions in salad oil until meat is brown and crumbly. Heat oven to 350 degrees. To meat, add tomatoes, tomato sauce, paste, and green peppers; simmer uncovered, stirring occasionally, 10 minutes. Then blend in cheddar cheese, salt, garlic powder, oregano and zucchini. Simmer uncovered 5 minutes.

Turn mixture into 12 x 8 x 2 baking dish (I used 9 x 13 dish) and sprinkle with Parmesan cheese. Bake 45 minutes or until top is browned and crusty.
