OVEN FRIED FISH 
1/4 c. butter
2 tsp. lemon juice
1/2 tsp. sugar
1/4 tsp. pepper
1/4 tsp. paprika
1/4 tsp. basil
1/8 tsp. onion powder
1/2 tsp. salt
1 lb. firm fresh cod or haddock, cut into serving pieces
1/3 c. dry bread crumbs
Vegetable oil

Combine butter, lemon juice, sugar and spices. Dip fresh fish in the butter mixture and roll in bread crumbs. Spread enough vegetable oil to lightly coat a shallow baking dish. Arrange the fish in single layer. Spoon on the remaining butter. Bake uncovered at 450 degrees for 15 minutes or until fish flakes easily with fork.

Serves 4 to 5 people.
