6 egg whites 2 c. Castor sugar (fine white) 1 1/2 tsp. vinegar Icing sugar 1 pt. strawberries 1 tsp. Kirsch (optional) If using a gas range, set oven at highest temperature just as you start to beat the egg whites. Beat egg whites at full speed until they stand in peaks. Sift sugar and sprinkle 1 tablespoon at a time into egg whites, beating at a high speed only until all sugar has been added. Lastly fold in vinegar and vanilla. Draw a 7 inch circle on greased greaseproof paper or aluminum foil and put on oven rack. Heat egg mixture on the circle of paper. Mound up the sides with a spatula and make a depression in the center. Turn heat to the lowest temperature just before putting Pavlova in bottom of oven to cook for 1 1/2 hours. Remove and leave until cold. Arrange 3/4 of the strawberries over whipped cream. Crush remaining strawberries with a fork and push through a sieve. Sweeten with icing sugar and flavor with Kirsch if liked. |
